Remove site from showcase no longer using Gatsby

Summary

My site is still in the showcase and has not been using Gatsby for several months.

Steps to Resolve this Issue

1. Remove my site from the showcase, likely by rerunning the validator mentioned in this PR: Showcase page has some sites which are not using Gatsby js anymore, and still they are in Featured sites section #38756

Maybe we should set this up to run on some regular schedule so the showcase remains up to date?
